  • ½ cup Italian bread crumbs
  • ¼ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp dried basil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp freshly ground black pepper
  • ¼ cup flour
  • 2 large eggs, beaten
  • 1 medium eggplant, sliced into ½-inch rounds
  • 1 cup marinara sauce, or more to taste
  • 8 slices mozzarella cheese, or as needed

Instructions

  1. 1 Prep Breading Station: Set up three shallow bowls - combine bread crumbs, Parmesan, and all seasonings in one, flour in another, and beaten eggs in the third
  2. 2 Bread Eggplant: Coat each eggplant slice in flour, dip in egg wash, then thoroughly coat with seasoned bread crumb mixture. Rest breaded slices for 5 minutes
  3. 3 Preheat: Heat air fryer to 370°F / 190°C
  4. 4 First Cook: Arrange breaded eggplant in a single layer in basket. Air fry 8-10 minutes until golden
  5. 5 Flip & Finish: Turn slices and continue cooking 4-6 minutes until crispy
  6. 6 Add Toppings: Top each piece with marinara and mozzarella. Air fry 1-2 minutes until cheese melts
  7. 7 Serve: Enjoy immediately while hot and crispy
