Spaghetti Squash Parmesan

- 1 spaghetti squash, 2-3 pounds
- 2 tbsp extra virgin olive oil
- ½ cup grated parmesan cheese, or pecorino romano
- salt & pepper, to taste
- chopped fresh parsley, for garnish
Instructions
- 1 Prep: Preheat air fryer to 375°F / 190°C. Cut spaghetti squash in half lengthwise and remove seeds.
- 2 Season: Brush cut sides thoroughly with olive oil.
- 3 Cook: Place squash halves cut-side up in air fryer basket (trim edges if needed to fit). Air fry for 25-30 minutes until fork tender.
- 4 Finish: Let cool slightly. Use fork to scrape squash into spaghetti-like strands. Season with salt and pepper, toss with parmesan cheese, and garnish with fresh parsley.
