Ingredients

  • 1½ cups all-purpose flour
  • 1¼ tsp baking powder
  • ¼ tsp baking soda
  • ⅛ tsp kosher salt
  • ⅓ cup granulated sugar
  • 6 tbsp unsalted butter
  • ½ cup buttermilk
  • ½ cup strawberries
  • ¼ cup powdered sugar
  • 1-2 tbsp heavy cream

Instructions

  1. 1 Prep: In a medium bowl, sift together the flour, sugar, baking powder, baking soda, and salt
  2. 2 Mix: Cut cold butter into pea-sized pieces and blend into dry ingredients using a pastry cutter or forks until crumbly
  3. 3 Combine: Pour in buttermilk and stir until just combined into a shaggy dough
  4. 4 Add Fruit: Gently fold in diced strawberries, taking care not to crush them
  5. 5 Shape: Pat dough into a ¾-inch thick circle and score into wedges
  6. 6 Air Fry: Transfer carefully to greased air fryer basket and cook at 350°F / 180°C for 15 minutes until fully baked
  7. 7 Glaze: Whisk powdered sugar with cream until smooth, then drizzle over warm scones
  8. 8 Note: Use maximum ½ cup dried strawberries to prevent excess moisture. Ensure strawberries are well-dried before adding to dough
