Ingredients

  • 2 cups white rice
  • 1 lb beef sirloin steak
  • 3 cups broccoli florets
  • 1 cup red bell pepper strips
  • 4 green onions, sliced
  • ⅓ cup low-sodium soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp fresh ginger
  • 3 cloves garlic, minced
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • ¼ tsp crushed red pepper
  • cooking spray
  • sesame seeds

Instructions

  1. Prep: Preheat air fryer to 400°F / 204°C
  2. Mix: In a large bowl, combine beef, broccoli, bell pepper, white parts of green onions, and vegetable oil. Lightly coat air fryer basket with cooking spray
  3. Cook: Air fry for 5 minutes, then stir. Continue cooking until beef reaches desired doneness (145°F / 63°C for medium), about 6-8 minutes more. Remove and rest for 5 minutes
  4. Sauce: Combine soy sauce, vinegar, honey, ginger, garlic, sesame oil, and crushed red pepper in a saucepan. Bring to boil, reduce heat and simmer until reduced to ½ cup (about 10 minutes)
  5. Thicken: Mix cornstarch with 1 tbsp water, stir into sauce until thickened (about 1 minute)
  6. Serve: Toss beef and vegetables with sauce, garnish with remaining green onions and sesame seeds. Serve over hot rice
