Ingredients
- 8 oz chicken breast or thighs
- 1 cup all-purpose flour
- 2 large eggs, beaten
- ¾ cup panko breadcrumbs
- 1 tbsp neutral oil
- Cooking spray
- Tonkatsu sauce for serving
- Shredded cabbage
Instructions
- Prepare: Flatten chicken to ¼ inch thickness using a meat mallet. Season generously with salt and allow to rest for 15 minutes
- Bread: Set up breading station with flour, beaten eggs, and panko mixed with oil. Coat chicken in flour, dip in egg, then press into panko
- Cook: Place in air fryer basket and cook at 350°F / 176°C for 6-8 minutes on each side until golden brown and crispy
- Rest: Remove from air fryer and let rest for 5 minutes to lock in juices
- Serve: Slice into strips and serve with tonkatsu sauce over shredded cabbage
