Cauliflower Tacos

  • 1 ½ cups all-purpose flour
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • salt & pepper, to taste
  • 1 ½ cups almond milk
  • 1 ½ cups panko bread crumbs
  • 1 medium head cauliflower, cut into bite-size florets
  • Cooking spray

Instructions

  1. 1 Make Batter: In a bowl, combine flour with spices and salt. Whisk in almond milk until smooth. Add panko to separate bowl.
  2. 2 Bread Cauliflower: Working in batches, dip florets in batter, then coat with panko.
  3. 3 Air Fry: Cook at 400°F / 200°C for 15 minutes, flipping halfway. Spray with oil for extra crispiness.
  4. 4 Build Tacos: Fill tortillas with crispy cauliflower and favorite toppings like avocado, slaw, fresh cilantro, and spicy mayo.
