Crispy Falafel

Ingredients

  • 8 oz dried chickpeas, soaked overnight
  • Fresh herbs (parsley, cilantro)
  • Shallot and garlic
  • Olive oil
  • Spices (cumin, salt, baking powder)
  • All-purpose flour if needed
  • Cooking spray
  • Tahini sauce for serving

Instructions

  1. 1 Blend: Combine soaked chickpeas, fresh herbs, shallot, garlic, olive oil and seasonings in food processor until mixture is finely ground but not pasty
  2. 2 Rest: Place mixture in refrigerator for 30 minutes to help it firm up
  3. 3 Shape: Using damp hands, form mixture into 1-inch balls or small patties
  4. 4 Cook: Air fry at 350°F / 180°C for 10 minutes, then flip and cook additional 5 minutes until golden brown and crispy
  5. 5 Serve: Enjoy hot with tahini sauce and warm pita bread
