Parmesan Artichokes

Ingredients

  • 1 can artichokes
  • 1½ cups Greek yogurt or Labneh
  • ⅓ cup Parmesan cheese
  • 2 tbsp bread crumbs
  • 2 tbsp olive oil
  • 2 tbsp parsley
  • 1 lemon
  • 1 garlic clove
  • salt & pepper

Instructions

  1. 1 Prep: Drain artichokes and pat dry thoroughly with paper towels. In a mixing bowl, combine artichokes with 1 tbsp olive oil, juice of half lemon, bread crumbs, Parmesan cheese, salt, and pepper
  2. 2 Air Fry: Transfer seasoned artichokes to air fryer basket. Lightly coat with cooking spray. Cook at 400°F / 200°C for 12 minutes, flipping halfway through for even browning
  3. 3 Make Sauce: Spread yogurt or Labneh in a serving bowl. Mix in remaining lemon juice, grated garlic, and lemon zest. Season with salt and pepper to taste
  4. 4 Serve: Arrange crispy artichokes over yogurt sauce. Drizzle with remaining olive oil and garnish with fresh parsley, additional Parmesan, and a final seasoning of salt and pepper
