Ingredients

  • 3 medium ripe but firm Hass avocados
  • 1 cup panko breadcrumbs
  • 1 tbsp Tajín seasoning (optional)
  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • 2 tbsp extra-virgin olive oil
  • 1 large egg, lightly beaten
  • Chipotle mayo or ranch for dipping (optional)

Instructions

  1. 1 Prepare Coating: In a shallow bowl, combine panko breadcrumbs, Tajín (if using), salt, and garlic powder. Drizzle with olive oil and mix well.
  2. 2 Prep Avocados: Halve and pit avocados. Cut each half into 4 even slices and carefully remove peel.
  3. 3 Bread: Dip each avocado slice in beaten egg, then coat thoroughly in seasoned panko mixture.
  4. 4 Air Fry: Place breaded slices in a single layer in air fryer basket. Cook at 350°F / 180°C for 7-9 minutes, flipping halfway, until golden brown and crispy.
  5. 5 Serve: Immediately serve hot with chipotle mayo or ranch for dipping.
