Ingredients

  • 2 medium zucchini (1 lb)
  • 2 slices turkey bacon
  • Olive oil cooking spray
  • 1 cup shredded cheddar
  • 1 large avocado
  • 3 cherry tomatoes, finely chopped
  • 1 tbsp finely chopped red onion
  • 1 tbsp fresh lime juice
  • 1 tsp fresh cilantro, plus more for serving
  • 1 small jalapeño, seeded and finely chopped
  • salt & pepper, to taste

Instructions

  1. Prepare Bacon: Cook turkey bacon in air fryer at 350°F or 176°C for 5 minutes, flipping once halfway. Let cool and chop finely.
  2. Prep Zucchini: Cut zucchini in half lengthwise, then crosswise. Using a spoon, hollow out centers leaving ¼-inch thick shells. Lightly spray with oil and season with salt and pepper.
  3. First Cook: Air fry zucchini boats at 400°F / 204°C for 7 minutes until they start to soften.
  4. Add Cheese: Sprinkle cheddar cheese into each boat. Return to air fryer for 1-2 minutes until cheese melts.
  5. Prepare Topping: In a bowl, combine mashed avocado, diced tomatoes, red onion, lime juice, cilantro, and jalapeño. Season with salt.
  6. Assemble: Top each zucchini boat with guacamole mixture, chopped bacon, extra cilantro and jalapeño if desired.
