Ingredients
- 2 medium zucchini (1 lb)
- 2 slices turkey bacon
- Olive oil cooking spray
- 1 cup shredded cheddar
- 1 large avocado
- 3 cherry tomatoes, finely chopped
- 1 tbsp finely chopped red onion
- 1 tbsp fresh lime juice
- 1 tsp fresh cilantro, plus more for serving
- 1 small jalapeño, seeded and finely chopped
- salt & pepper, to taste
Instructions
- 1 Prepare Bacon: Cook turkey bacon in air fryer at 350°F or 180°C for 5 minutes, flipping once halfway. Let cool and chop finely.
- 2 Prep Zucchini: Cut zucchini in half lengthwise, then crosswise. Using a spoon, hollow out centers leaving ¼-inch thick shells. Lightly spray with oil and season with salt and pepper.
- 3 First Cook: Air fry zucchini boats at 400°F / 200°C for 7 minutes until they start to soften.
- 4 Add Cheese: Sprinkle cheddar cheese into each boat. Return to air fryer for 1-2 minutes until cheese melts.
- 5 Prepare Topping: In a bowl, combine mashed avocado, diced tomatoes, red onion, lime juice, cilantro, and jalapeño. Season with salt.
- 6 Assemble: Top each zucchini boat with guacamole mixture, chopped bacon, extra cilantro and jalapeño if desired.
