Chicken Tenders

  • 2 large eggs
  • ½ cup seasoned breadcrumbs
  • ½ cup seasoned panko
  • 12 chicken tenders (1¼ lbs)
  • 1 tsp kosher salt
  • Black pepper, to taste
  • Olive oil spray
  • Lemon wedges

Instructions

  1. 1 Prep: Season chicken tenders generously with salt and pepper to taste.
  2. 2 Coating Station: Set up two shallow bowls - one with beaten eggs and another with combined breadcrumbs and panko.
  3. 3 Bread: Working one at a time, dip each tender in egg mixture, then coat thoroughly in breadcrumb mixture. Place on a clean plate.
  4. 4 Oil: Spray both sides of breaded tenders generously with olive oil spray.
  5. 5 Air Fry: Cook in batches at 400°F / 200°C for 5-6 minutes per side until golden brown and cooked through.
  6. 6 Serve: Plate immediately and serve with fresh lemon wedges for squeezing.
