- 1 pound fresh okra
- 2 large eggs
- 1 cup panko breadcrumbs
- ¼ cup cornmeal
- 2 tbsp canola oil
- Seasonings (salt, celery salt, garlic powder)
- Remoulade sauce for dipping
Instructions
- 1 Prepare: Slice fresh okra into ¼-inch rounds. In a skillet, lightly toast panko breadcrumbs with canola oil until golden brown
- 2 Season: Combine toasted panko with cornmeal and seasonings in a shallow dish. Beat eggs in a separate bowl
- 3 Coat: Dredge okra pieces in beaten egg, then thoroughly coat with the seasoned panko-cornmeal mixture
- 4 Air Fry: Arrange in a single layer in air fryer basket. Cook at 350°F / 180°C for 10-12 minutes until golden and crispy
- 5 Serve: Transfer to serving plate and enjoy hot with remoulade sauce
