  • 1 pound fresh okra
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ¼ cup cornmeal
  • 2 tbsp canola oil
  • Seasonings (salt, celery salt, garlic powder)
  • Remoulade sauce for dipping

Instructions

  1. 1 Prepare: Slice fresh okra into ¼-inch rounds. In a skillet, lightly toast panko breadcrumbs with canola oil until golden brown
  2. 2 Season: Combine toasted panko with cornmeal and seasonings in a shallow dish. Beat eggs in a separate bowl
  3. 3 Coat: Dredge okra pieces in beaten egg, then thoroughly coat with the seasoned panko-cornmeal mixture
  4. 4 Air Fry: Arrange in a single layer in air fryer basket. Cook at 350°F / 180°C for 10-12 minutes until golden and crispy
  5. 5 Serve: Transfer to serving plate and enjoy hot with remoulade sauce
