Hearts of Palm Sticks

Ingredients

  • 1 (14 oz) can hearts of palm, drained
  • ¼ cup flour
  • 1 large egg
  • ¼ cup Italian breadcrumbs
  • 2 tbsp panko breadcrumbs
  • 2 tbsp grated Parmesan
  • Salt & pepper, to taste
  • Olive oil spray
  • Marinara sauce for dipping

Instructions

  1. 1 Prepare Breading: In three separate bowls: 1) Season flour with salt and pepper 2) Whisk egg until smooth 3) Mix Italian breadcrumbs, panko, and Parmesan
  2. 2 Bread Palm Sticks: Cut hearts of palm into sticks. Dredge in flour mixture, dip in beaten egg, then coat thoroughly in breadcrumb mixture
  3. 3 Chill: Place breaded sticks in freezer for 20 minutes to set coating
  4. 4 Cook: Spray breaded sticks with olive oil. Air fry at 400°F / 200°C for 6 minutes, flip, then cook additional 6 minutes until golden brown and crispy
  5. 5 Serve: Transfer to serving plate and serve hot with marinara sauce for dipping
