Hearts of Palm Sticks

- 1 (14 oz) can hearts of palm, drained
- ¼ cup flour
- 1 large egg
- ¼ cup Italian breadcrumbs
- 2 tbsp panko breadcrumbs
- 2 tbsp grated Parmesan
- Salt & pepper, to taste
- Olive oil spray
- Marinara sauce for dipping
Instructions
- 1 Prepare Breading: In three separate bowls: 1) Season flour with salt and pepper 2) Whisk egg until smooth 3) Mix Italian breadcrumbs, panko, and Parmesan
- 2 Bread Palm Sticks: Cut hearts of palm into sticks. Dredge in flour mixture, dip in beaten egg, then coat thoroughly in breadcrumb mixture
- 3 Chill: Place breaded sticks in freezer for 20 minutes to set coating
- 4 Cook: Spray breaded sticks with olive oil. Air fry at 400°F / 200°C for 6 minutes, flip, then cook additional 6 minutes until golden brown and crispy
- 5 Serve: Transfer to serving plate and serve hot with marinara sauce for dipping
