- 1 medium eggplant
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan
- 1 large egg
- Italian seasoning
- Garlic powder
- Marinara sauce for dipping
Instructions
- 1 Prepare: Slice eggplant lengthwise into 1-inch thick strips, sprinkle with salt and allow to drain for 30 minutes
- 2 Season: Create coating by mixing panko breadcrumbs, Parmesan, Italian seasoning, and garlic powder in a shallow dish
- 3 Coat: Dip each eggplant strip in beaten egg, then thoroughly coat with the seasoned breadcrumb mixture
- 4 Cook: Air fry at 400°F / 200°C for 8 minutes, then flip and continue cooking for 7 minutes until golden brown and crispy
- 5 Serve: Transfer to serving plate and enjoy immediately with warm marinara sauce for dipping
