Ingredients

  • 1 medium eggplant
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan
  • 1 large egg
  • Italian seasoning
  • Garlic powder
  • Marinara sauce for dipping

Instructions

  1. 1 Prepare: Slice eggplant lengthwise into 1-inch thick strips, sprinkle with salt and allow to drain for 30 minutes
  2. 2 Season: Create coating by mixing panko breadcrumbs, Parmesan, Italian seasoning, and garlic powder in a shallow dish
  3. 3 Coat: Dip each eggplant strip in beaten egg, then thoroughly coat with the seasoned breadcrumb mixture
  4. 4 Cook: Air fry at 400°F / 200°C for 8 minutes, then flip and continue cooking for 7 minutes until golden brown and crispy
  5. 5 Serve: Transfer to serving plate and enjoy immediately with warm marinara sauce for dipping
