Ingredients

  • 2 (10 oz) pkgs frozen chopped spinach, thawed and squeezed dry
  • ½ cup crumbled feta cheese
  • ½ cup shredded mozzarella
  • ½ cup grated Parmesan
  • 1 clove garlic, minced
  • 1 lb frozen phyllo dough, thawed
  • ½ cup unsalted butter, melted
  • Tzatziki sauce for serving
  • Fresh dill for garnish

Instructions

  1. 1 Prepare Filling: In a large mixing bowl, combine thawed spinach, feta, mozzarella, Parmesan, and minced garlic. Mix well until evenly incorporated.
  2. 2 Assemble Pastries: Carefully layer 3 sheets of phyllo dough, brushing melted butter between each layer. Cut the layered sheets into 3-inch wide strips lengthwise.
  3. 3 Shape Triangles: Place a tbsp of filling at the bottom of each strip. Fold corner over filling to create a triangle shape. Continue folding up the strip maintaining triangle shape. Brush completed triangles with butter.
  4. 4 Air Fry: Place triangles in air fryer basket with space between each. Cook at 375°F / 190°C for 12-15 minutes until golden brown and crispy.
  5. 5 Garnish & Serve: Transfer to serving plate, garnish with fresh dill, and serve with tzatziki sauce on the side.
