Hasselback Potatoes

Ingredients

  • 2 small to medium Russet potatoes
  • 1½ tbsp ghee, melted (or butter)
  • 2 cloves garlic, minced
  • salt and pepper
  • 2 tbsp minced fresh chives

Instructions

  1. 1 Prep: Clean potatoes and make thin parallel slices (1/8") across the top, being careful not to cut all the way through
  2. 2 Season: Brush potatoes thoroughly with melted ghee or butter, making sure to get between slices. Season generously with salt, pepper and minced garlic
  3. 3 Cook: Air fry at 400°F / 200°C for 30 minutes until edges are golden brown and potatoes are tender inside
  4. 4 Finish: Brush with remaining ghee/butter and garnish with fresh chives before serving immediately for maximum crispiness
