Ingredients
- 4 (4 oz) rainbow trout fillets
- ⅔ cup finely chopped pecans
- 1 tsp dried rosemary, crushed
- 2 tbsp flour
- 1 large egg
- 2 tsp maple syrup
- Salt & pepper, to taste
- Lemon wedges for serving
Instructions
- Prepare Breading Station: In three separate shallow dishes: 1) combine crushed pecans with rosemary and salt, 2) place flour, and 3) whisk the egg until smooth.
- Bread the Fish: Working with one fillet at a time, coat first in flour, then dip in beaten egg, and finally press into the pecan mixture to coat evenly.
- Cook: Place breaded fillets in air fryer basket. Air fry at 400°F / 204°C for 7-8 minutes, or until fish is cooked through and flakes easily with a fork (internal temperature should reach 145°F or 63°C).
- Serve: Transfer to serving plates, drizzle each fillet with maple syrup, and garnish with fresh lemon wedges.
