Pecan Crusted Trout

Ingredients

  • 4 (4 oz) rainbow trout fillets
  • ⅔ cup finely chopped pecans
  • 1 tsp dried rosemary, crushed
  • 2 tbsp flour
  • 1 large egg
  • 2 tsp maple syrup
  • Salt & pepper, to taste
  • Lemon wedges for serving

Instructions

  1. 1 Prepare Breading Station: In three separate shallow dishes: 1) combine crushed pecans with rosemary and salt, 2) place flour, and 3) whisk the egg until smooth.
  2. 2 Bread the Fish: Working with one fillet at a time, coat first in flour, then dip in beaten egg, and finally press into the pecan mixture to coat evenly.
  3. 3 Cook: Place breaded fillets in air fryer basket. Air fry at 400°F / 200°C for 7-8 minutes, or until fish is cooked through and flakes easily with a fork (internal temperature should reach 145°F or 63°C).
  4. 4 Serve: Transfer to serving plates, drizzle each fillet with maple syrup, and garnish with fresh lemon wedges.
