Potato Latkes

Ingredients

  • 1.5 lbs russet potatoes
  • ½ medium yellow onion
  • 2 large eggs
  • ¼ cup matzo meal
  • salt & pepper, to taste
  • Cooking spray
  • Sour cream and applesauce for serving

Instructions

  1. 1 Prepare: Coarsely grate potatoes and onion using a food processor or box grater. Place in a clean kitchen towel and squeeze firmly to remove as much moisture as possible
  2. 2 Mix: In a large bowl, stir together the drained potato-onion mixture with beaten eggs, matzo meal, and season well with salt and pepper
  3. 3 Shape: Using a 2 tbsp measure, portion the mixture and gently press into thin patties
  4. 4 Cook: Air fry at 375°F / 190°C for 8 minutes, then carefully flip and cook another 8 minutes until golden brown and crispy
  5. 5 Serve: Transfer to a serving platter and enjoy hot with traditional toppings of sour cream and applesauce
