Sweet Potato Chips

Ingredients

  • 1 medium sweet potato
  • 1 tbsp canola oil
  • 1 tsp kosher salt
  • ¾ tsp dried thyme
  • ½ tsp black pepper
  • ¼ tsp paprika
  • Pinch cayenne (optional)
  • Cooking spray

Instructions

  1. 1 Prepare: Using a sharp knife or mandoline, slice sweet potato into uniform 1/8 inch rounds. Place slices in cold water and soak for 20 minutes to remove excess starch. Drain and thoroughly pat dry with paper towels
  2. 2 Season: In a large bowl, drizzle oil over dried sweet potato slices. Sprinkle with salt, thyme, black pepper, paprika and cayenne if using. Toss gently to evenly coat all pieces
  3. 3 Cook: Air fry at 360°F / 180°C for 19-22 minutes, shaking the basket every 5 minutes for even cooking. Chips should be golden brown with slightly curled edges
  4. 4 Rest: Remove chips to a paper towel-lined plate. They will continue to crisp up as they cool to room temperature
