1½ cups green cabbage, very finely shredded
⅓ cup carrot, finely julienned
2 scallions, thinly sliced
¼ tsp salt
¼ tsp black pepper
1 tsp butter, for greasing the pan

4 slices thick-cut milk bread or white sandwich bread (about ½ inch)
3 tbsp salted butter, softened
2 slices American or mild cheddar cheese
4 thin slices deli ham
Finish
2 tsp granulated sugar
2 tbsp ketchup
1 tbsp Kewpie mayonnaise

Steps

    Whisk the eggs with salt and pepper, then fold in the shredded cabbage, carrot, and scallions until evenly coated.

    Butter a 6-inch silicone or metal pan that fits your basket, pour in the egg mixture, and spread it flat. Air fry at 350°F for 8-9 minutes until the patty is fully set with no liquid egg in the center — 160°F on a thermometer. Turn it out and cut it in half.

    Spread butter edge to edge on both sides of all four bread slices. Lay them in a single layer and air fry at 380°F for 5 minutes, flipping at the 3-minute mark, until golden and crisp. Add the ham slices to the basket for the final 2 minutes to warm and curl at the edges.

    Lay a slice of cheese on each of two hot toasts so it starts melting, then stack on the egg patty half and two slices of ham.

    Sprinkle ½ tsp sugar directly over the egg patty on each sandwich — this is the move that makes it taste like the street cart. Squiggle on ketchup and mayonnaise and close with the second slice of toast.
