
Slice Spam into 8 even pieces, about 1/4-inch thick. Arrange in a single layer in the air fryer basket.
Air fry at 390°F for 5 minutes, flip, and cook another 4-5 minutes until edges are caramelized and crispy.
While Spam cooks, warm soy sauce, mirin, and sugar in a small pan until syrupy. Season rice with rice vinegar, sesame oil, and salt.
Brush crispy Spam slices with the soy glaze. Shape rice into rectangles, top with a Spam slice, and wrap with a strip of seaweed.
Sprinkle with sesame seeds and serve immediately.
Tip: Use the Spam can as a mold for shaping the rice — line it with plastic wrap, press rice in firmly, then slice into portions. Warm rice is essential as it sticks together better.
