1 tbsp mirin
1 tbsp sugar
Rice
3 cups cooked short-grain rice, warm
2 tbsp rice vinegar
1 tsp sesame oil
1/2 tsp salt
Assembly
4 sheets roasted seaweed (gim), cut into strips
1 tsp toasted sesame seeds

Steps

    Slice Spam into 8 even pieces, about 1/4-inch thick. Arrange in a single layer in the air fryer basket.

    Air fry at 390°F for 5 minutes, flip, and cook another 4-5 minutes until edges are caramelized and crispy.

    While Spam cooks, warm soy sauce, mirin, and sugar in a small pan until syrupy. Season rice with rice vinegar, sesame oil, and salt.

    Brush crispy Spam slices with the soy glaze. Shape rice into rectangles, top with a Spam slice, and wrap with a strip of seaweed.
