
Toss cashews with olive oil until coated.
Air fry at 300°F for 8-10 minutes, shaking every 3 minutes, until golden and fragrant.
Immediately toss hot cashews with lemon zest, pepper, salt, and garlic powder.
Spread on parchment to cool. They crisp up more as they cool.
Store in an airtight container for up to 2 weeks.
Tip: Add the lemon zest after cooking — heat destroys the bright citrus flavor. Low temperature prevents burning; cashews have high fat content and go from golden to burnt fast.
