
Peel ripe plantains and slice on the diagonal, about 1/2-inch thick.
Toss with coconut oil and salt.
Air fry at 400°F for 8-10 minutes, flipping halfway, until golden brown and caramelized.
Sprinkle with a pinch of salt.
Serve with sour cream, hot sauce, or alongside rice and beans.
Tip: Ripe plantains (yellow with plenty of black spots) are sweet and perfect for this recipe. Green plantains are starchy and need a different approach (tostones). The riper the plantain, the sweeter and more caramelized the result.
