
Freeze goat cheese rounds for 15 minutes so they hold their shape.
Mix panko with herbs de Provence. Set up breading: flour, egg, herbed panko.
Dredge each round in flour, then egg, then panko. Press coating gently.
Spray with cooking spray.
Air fry at 400°F for 5-7 minutes until golden. Serve on mixed greens with honey, balsamic, walnuts, and fruit.
Tip: Cold goat cheese is easier to bread and holds its shape during cooking. It should be warm and creamy inside but not fully melted. These go from perfect to flat puddles quickly, so watch them. The honey drizzle on top is non-negotiable.
