3 firm (slightly underripe) avocados, sliced into wedges
1/2 cup flour
2 eggs, beaten
1 cup panko breadcrumbs
1/4 cup grated Parmesan
Seasoning
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
Dipping
Chipotle mayo or sriracha ranch
Lime wedges

Steps

    Slice firm avocados into thick wedges — too thin and they fall apart.

    Set up breading station: flour, beaten eggs, panko mixed with Parmesan and seasonings.

    Gently dredge each wedge: flour, egg, panko. Handle carefully — avocado is delicate.

    Spray with cooking spray. Air fry at 400°F for 8-10 minutes until golden and crispy.

    Serve immediately with chipotle mayo and lime wedges.

Tip: Use firm, slightly underripe avocados — ripe ones turn to mush during coating. Handle gently; the coating does the heavy lifting. These don't hold well, so eat them right away.
