
Spread cheese evenly over one half of each tortilla. Add any optional fillings.
Fold tortillas in half. Spray both sides with cooking spray.
Air fry at 375°F for 4-6 minutes, flipping halfway, until tortilla is golden and crispy and cheese is melted.
Let cool 1 minute before cutting into wedges.
Serve with sour cream, guacamole, and salsa.
Tip: Spray the outside of the tortilla — that's what makes it restaurant-crispy instead of just heated. Don't overstuff or cheese oozes out everywhere. A mix of cheeses (Oaxaca, cheddar, Monterey Jack) melts better than a single cheese.
