
Combine all marinade ingredients. Add steak and marinate at least 2 hours, or overnight.
Remove steak from marinade. Pat dry and season with extra salt.
Air fry at 400°F for 10-12 minutes, flipping halfway, until charred and medium-rare (130°F).
Rest 5 minutes. Slice thin against the grain.
Serve with warm tortillas, diced onion, cilantro, lime wedges, and salsa verde.
Tip: Skirt steak is more traditional and has more flavor; flank steak is leaner. The citrus in the marinade tenderizes the meat — don't marinate longer than 8 hours or it gets mushy. Always slice against the grain.
