
Chill leftover mac and cheese until firm (at least 2 hours). Mix in extra cheddar.
Scoop into balls using a small ice cream scoop or tablespoon.
Roll in flour, then egg, then panko. Press coating on firmly.
Spray all sides with cooking spray.
Air fry at 400°F for 8-10 minutes, turning halfway, until golden brown and cheese is melting. Serve with dipping sauces.
Tip: The mac and cheese MUST be completely cold and firm or you can't form balls. Day-old mac works best. Add extra cheese to the mix for a gooier center. Freeze the formed balls 20 minutes before breading for neater results.
