1 lb carrots, peeled (halve thick ones lengthwise)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
Glaze
1 tbsp honey
1 tbsp butter, melted
1 tsp fresh thyme leaves
Finish
Flaky sea salt
Fresh parsley

Steps

    Peel carrots and halve any thick ones so all pieces are similar thickness.

    Toss with olive oil, salt, and pepper.

    Air fry at 390°F for 12-15 minutes, shaking once, until tender and caramelized on the edges.

    Toss with honey, melted butter, and thyme while hot.

    Finish with flaky salt and parsley.

Tip: Thinner carrots cook faster — halve the thick ones so everything finishes together. The natural sugars in carrots make them caramelize beautifully. Toss the glaze on while hot so it melts and coats evenly.
