1 large eggplant, cut into 3-inch sticks

Breading

2 eggs, beaten
1 cup panko breadcrumbs
1/3 cup grated Parmesan
1 tsp Italian seasoning
1/2 tsp garlic powder
Serving
Marinara sauce for dipping
Fresh basil

Steps

    Cut eggplant into 1/2-inch thick sticks. Salt and let sit 15 minutes, then pat very dry.
