
Set up three bowls: flour, beaten eggs, breadcrumbs with garlic powder.
Coat each stick: flour → egg → breadcrumbs → egg → breadcrumbs again (double coat is essential).
Freeze on parchment-lined tray for at least 1 hour. Do not skip this.
Spray frozen sticks with oil. Air fry at 390°F for 6-8 minutes, flipping halfway.
Tip: NEVER skip freezing — it's what prevents the cheese from melting out before the coating crisps.
