Chicken
1.5 lbs chicken breast, pounded thin and cut into strips
1 cup Italian breadcrumbs
1/2 cup grated Parmesan
2 eggs, beaten
1/2 cup flour
Lemon Garlic Butter
4 tbsp butter, melted
3 cloves garlic, minced
2 tbsp lemon juice
1 tbsp capers
2 tbsp fresh parsley

Steps

    Pound chicken thin (1/4 inch) and cut into 1-inch wide strips. Thread onto skewers accordion-style.

    Dredge in flour, dip in egg, coat in breadcrumb-Parmesan mixture. Press firmly.

    Spray with oil. Air fry at 400°F for 12-14 minutes, flipping halfway, until golden and cooked through.

    Sauté garlic in melted butter 30 seconds. Add lemon juice and capers.
