
Cut fish into stick shapes, about 1 inch wide and 3 inches long.
Set up breading: flour, beaten eggs, panko mixed with garlic powder and paprika.
Dredge sticks in flour, egg, then panko. Press coating on firmly.
Spray generously with cooking spray.
Air fry at 400°F for 8-10 minutes, flipping halfway, until golden and crispy. Serve with ketchup, tartar sauce, and lemon.
Tip: Cut the fish into uniform sticks so they cook evenly. Press the panko on firmly — loose coating falls off. These freeze well: bread them, freeze on a sheet pan, then store in a bag. Air fry from frozen for 12 minutes.
