
Mix sausage meat with sage, thyme, nutmeg, salt, and pepper.
Divide into 4 portions. Flatten each portion and wrap around a hard-boiled egg, sealing completely with no gaps.
Roll in flour, then beaten egg, then panko. Press coating firmly.
Spray generously with cooking spray.
Air fry at 400°F for 12-14 minutes, turning every 4 minutes, until sausage is cooked through and coating is deeply golden.
Tip: Wet your hands when wrapping the sausage — it sticks less. Make sure there are no gaps or the egg will pop out during cooking. For a runnier yolk, use 6-minute soft-boiled eggs instead and reduce air fry time by 2 minutes.
