Ingredients

Chicken
1.5 lbs chicken thighs, sliced into strips
1 tbsp curry powder
1 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
2 cloves garlic, minced
Peanut Sauce
1/4 cup peanut butter
2 tbsp soy sauce
1 tbsp lime juice
1 tbsp sriracha
1 tbsp brown sugar
2 tbsp warm water

Steps

    Slice chicken thighs into thin strips. Toss with curry powder, soy sauce, fish sauce, brown sugar, and garlic. Marinate 30 minutes.

    Thread onto skewers. Air fry at 400°F for 10-12 minutes, turning halfway, until charred and cooked through.

    Whisk peanut sauce ingredients together until smooth.

    Serve skewers with peanut sauce for dipping.

Tip: Thighs are non-negotiable here — breast dries out on skewers. Thread the meat in a flat zigzag pattern so it cooks evenly. The peanut sauce thickens as it sits; add more warm water to thin it.
