
Mix marinade ingredients. Marinate flank steak for at least 2 hours (overnight is best).
Remove steak from marinade and pat dry. Let it come to room temperature for 15 minutes.
Air fry at 400°F for 5-7 minutes per side for medium-rare (130°F internal).
Top with butter and fresh rosemary. Rest for 5 minutes — this is critical.
Slice thin against the grain. Finish with flaky sea salt.
Tip: Always slice against the grain — it's the difference between tender and chewy. Rest the full 5 minutes or all the juices end up on the cutting board instead of in the meat.
