1 tbsp cornstarch
1 tsp salt
Topping
4 cloves garlic, minced
½ cup Parmigiano-Reggiano, grated
1 tbsp truffle oil
2 tbsp butter, melted
2 tbsp fresh parsley

Steps

    Cut potatoes into ¼-inch sticks. Soak in cold water 30 minutes, then drain and pat bone-dry.

    Toss with olive oil, cornstarch, and salt until evenly coated.

    Air fry at 380°F for 18-22 minutes, shaking every 6 minutes until deeply golden.

    Immediately toss hot fries with garlic butter, truffle oil, and Parmigiano. Top with parsley.
