
Combine warm water, milk, sugar, and yeast. Let sit 5 minutes until foamy.
Add melted butter, vanilla, salt, and flour. Mix until a soft dough forms, then knead briefly until smooth.
Cover and let dough rise for 30 minutes in a warm spot.
Roll dough to ½-inch thickness and cut into 2-inch squares.
Spray beignets with cooking spray and air fry at 360°F for 6–8 minutes, flipping halfway, until puffed and golden.
Immediately toss in powdered sugar and serve warm.
Tip: The dough should be slightly sticky — resist the urge to add too much flour or the beignets will be dense. Dust with powdered sugar while they are still hot so it clings to the surface.
