
Whisk together flour, baking powder, sugar, and salt in a large bowl.
Cut cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs with some pea-sized pieces remaining.
Pour in cold buttermilk and stir until the dough just comes together, then turn out onto a floured surface and fold the dough over itself 4-5 times to create layers.
Pat dough to 3/4-inch thickness and cut out 6 biscuits with a 2.5-inch round cutter, pressing straight down without twisting.
Place biscuits in the air fryer basket with sides touching for taller rise, and air fry at 340°F for 10-12 minutes until golden brown on top.
Brush immediately with melted butter and sprinkle with flaky sea salt.
Tip: The key to flaky biscuits is keeping everything cold — chill your flour and use frozen butter if possible. When cutting, press straight down without twisting, as twisting seals the edges and prevents proper rise.
