Steps

  1. 1

Whisk flour, baking powder, sugar, and salt. Cut in cold butter until pea-sized crumbs form — don't over-mix.

  2. 2

Add cold buttermilk and stir until just combined. Turn onto a floured surface, fold 3-4 times for layers.

  3. 3

Pat to 1-inch thickness. Cut with a 2.5-inch biscuit cutter — press straight down, don't twist.

  4. 4

Place biscuits in the basket with space between them. Air fry at 330°F for 10-12 minutes until tall and golden.

  5. 5

Brush tops with melted butter and sprinkle with flaky salt immediately.

💡

Tip: Cold butter and cold buttermilk are non-negotiable — they create steam pockets that make the layers. Twisting the cutter seals the edges and prevents rising.

Why Air Fry This?

  • 🌡️Concentrated heat circulation produces even browning and a crispier crust than a full-size oven.
  • 🔥Rapid air circulation delivers oven-quality results in a fraction of the time.
