Ingredients

Tomato Base
1 cup crushed tomatoes
1/4 cup diced roasted red pepper
1 clove garlic, minced
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon red pepper flakes
salt and pepper to taste
Assembly
2 large eggs
2 tablespoons crumbled feta cheese
1 tablespoon fresh parsley, chopped
crusty bread for serving

Steps

    Stir together crushed tomatoes, roasted red pepper, garlic, cumin, smoked paprika, red pepper flakes, salt, and pepper in a bowl.

    Divide the tomato mixture evenly between two greased ramekins.

    Air fry the sauce at 360°F for 5 minutes until bubbling around the edges.

    Carefully crack one egg into the center of each ramekin and sprinkle feta cheese around the eggs.

    Return to the air fryer and cook at 360°F for 8-10 minutes until the egg whites are set but the yolks are still slightly runny.
