1 lb mixed mushrooms (cremini, button, or baby bella), halved
2 tbsp olive oil
2 cloves garlic, minced
1 tsp soy sauce
Salt and pepper
Finish
1 tbsp butter
Fresh thyme
Fresh parsley
Balsamic glaze (optional)

Steps

    Halve or quarter mushrooms to uniform size. Toss with olive oil, garlic, soy sauce, salt, and pepper.

    Air fry at 400°F for 8-10 minutes, shaking halfway, until golden brown and slightly crispy on edges.

    Toss with butter, fresh thyme, and parsley.

    Drizzle with balsamic glaze if desired.

💡

Tip: Don't wash mushrooms — wipe them with a damp towel. Water makes them steam instead of roast. The soy sauce adds umami depth without making them taste Asian. They shrink significantly, so start with more than you think you need.
