
Toss cauliflower with olive oil, cumin, paprika, chili powder, salt, and pepper.
Air fry at 400°F for 15-18 minutes, shaking halfway, until charred and crispy.
Blend avocado, sour cream, lime juice, and salt until smooth.
Warm tortillas. Fill with crispy cauliflower, avocado crema, pickled onions, and cilantro.
Squeeze lime over the top and serve.
Tip: Get the cauliflower really charred — the smoky, crispy edges are what make these tacos work. Undercooked cauliflower in a taco is disappointing.
