What temperature should I use in my air fryer for most foods?
Most foods cook best between 370°F and 400°F (190-200°C). Use 400°F for anything you want crispy (wings, fries, Brussels sprouts, steak), 375-390°F for proteins that dry out easily (chicken breast, salmon, pork chops), and 325-350°F for delicate items like biscuits, cookies, and pastries that need to cook through without burning on the outside.
How do I know when air fryer food is done?
For meat, always go by internal temperature with an instant-read thermometer: chicken at 165°F, ground beef and pork at 160°F, whole cuts of beef/pork at 145°F, and salmon at 125-145°F depending on doneness preference. For vegetables and frozen foods, check for visible golden-brown edges and crisp texture. The times in our chart are a starting point , every air fryer runs slightly differently, so check a minute or two before the minimum time.
Should I preheat my air fryer?
Yes, for best results. Preheat for 3-5 minutes at your cooking temperature. It matters most for foods that benefit from an immediate sear (steaks, burgers, salmon) or crisp (wings, fries, frozen items). Our cook times assume a preheated basket. If your model preheats fast or the manual says skip it, add 1-2 minutes to the lower end of the time range.
Do I need to flip or shake food in the air fryer?
For small or stackable foods , fries, tots, wings, Brussels sprouts, frozen items , shake the basket halfway through for even browning. For larger single pieces like steak, chicken breast, pork chops, and burgers, flip once at the halfway point. Delicate fish fillets, crab cakes, and egg dishes should not be flipped , they cook through without it.
How is this different from the cooking times on the packaging?
Package directions are usually calibrated for conventional ovens at higher volumes or for older air fryer models. Air fryers cook 15-25% faster than ovens at the same temperature because of the rapid air circulation, so always start with the low end of any range and check early. Our chart gives you air-fryer-specific times tested for a preheated basket with food in a single layer.
Do all air fryers use the same times?
No , basket models (Ninja, Cosori, Philips) tend to run hotter and cook faster than oven-style models (Breville, Cuisinart). Larger baskets with more airflow also crisp faster than small baskets that get crowded. Our times are tuned for a mid-size 5-6 quart basket with food in a single layer. For a smaller 3-quart or a large 8-quart oven-style, check doneness 2-3 minutes earlier than our minimum.
Can I cook frozen food without thawing?
Yes , that is one of the main strengths of an air fryer. Almost all frozen foods (fries, nuggets, fish sticks, dumplings, mozzarella sticks) go straight from freezer to basket with no oil needed. Add 2-4 minutes to the fresh-equivalent cook time, and shake halfway through so pieces don't fuse together.
Do I need to add oil?
Most foods need a light spritz of oil for the crispiest result , especially homemade fries, breaded items, and vegetables. Use a neutral high-smoke-point oil (avocado, canola, or refined olive). Frozen pre-fried foods already contain oil and don't need more. Fatty foods like bacon, sausage, chicken thighs, and salmon render their own fat and need no added oil.
